ABED 073 Communication Skills Culinary Applications II2 credits This course is exclusively for students who qualify for and enroll in the second quarter of the I-BEST Culinary Arts Certificate of Completion. It addresses industry specific vocabulary and language skills covered in the second term technical courses (CART 120 and 130).
Prerequisites: CART 110 and CART 115
Corequisites: CART 120 and CART 130
Course Outcomes Upon successful completion of this course students will be able to:
Determine the meaning of and accurately pronounce symbols, key terms, and other words and phrases used in the culinary arts field and culinary industries
Respond to and give oral directions using vocabulary common to professional kitchen environments
Recognize, describe, and determine the use of common foods and spices used in the professional kitchen
Recognize and follow standardized recipes
Participate actively in structured conversation, as part of a large group, in small groups, and with a partner, on topics related to culinary arts
Interpret words and phrases as they are used in texts, including texts and information regarding culinary recipes, workplace policies, worker rights, and employer expectations
Read and follow complex recipes
Describe and perform required cooking techniques in a professional cooking environment
Develop written informative/explanatory texts that are both grammatically correct and present accurate information in response to topics related to the culinary arts Total Hours: 20 Lecture Hours: 20
