CART 125 Food Sustainability and Trends

2 credits
The course focuses on issues pertaining to the flow of food through society. Subjects examined will include such topics as organic, conventional and natural as it related to food; what does sustainability mean as it relates to farming and fishing; what are GMOs and are they good or bad; food security and other related subjects. Modern trends in the food service will also be discussed to familiarize students with current topics as they enter the job market.

Prerequisites: CART 110 CART 115 , and CART 155  

Corequisites: CART 120  and CART 130  

Course Outcomes
Upon successful completion of the course the student will be able to:

  • Define and use common terms used by the industry related to food matters
  • Define and use terms relating to modern trends in the food industry
  • Describe the differing methods used in food production
  • Debate the merits of the different food production methods
  • Identify the laws and regulations governing production and distribution of food
  • Evaluate quality in food products
